Deb's Cheesecake Recipe

Ingredients:

Crust:

  • 2½ cups graham cracker crumbs
  • ½ teaspoon cinnamon
  • ¼ cup sugar
  • ½ Tsp lemon zest
  • 8 Tbsp melted butter

Filling:

  • 3 - 8oz pkgs. Philadelphia Cream Cheese at room temperature
    (I've tried substituting with cheaper brands...it doesn't work as well)
  • 3 extra large eggs, room temperature
  • ¾ cup granulated sugar
  • 1½ Tsp real vanilla extract

 Topping:

  • 1¼ cups sour cream
  • cup granulated sugar
  • 1 Tbsp vanilla

Mixing & Baking Directions:

Mix Crust ingredients and pat into bottom and up the sides of a spring form pan.

Preheat oven to 375°

Mix and beat all the Filling ingredients until smooth and lump free.  Pour into springform pan and bake at 375° for 30 minutes.  Remove from oven, and rest for 15 minutes.

Turn oven up to 475° for next step...

Mix and beat Topping ingredients together, and pour onto top of cheesecake. 

Bake at 475° for 10 minutes.  Remove from oven and let stand until room temp. then refrigerate.
